Mini Pork Meatballs in Two Sauces - It's Tapas Time

 

Talk about a tasty little meatball! Loaded with garlic, lightly fried then finished off in either a white wine or tomato sauce. It’s Tapas Time!


Ingredients

Makes about 30 meatballs

2lbs ground pork

1 tablespoon smoked paprika

1-teaspoon cumin

2-teaspoon oregano

4 garlic cloves, minced

2 tablespoons fresh parsley, minced

¾ cup panko breadcrumbs

1 egg, beaten

Olive oil

Combine pork, spices, break crumbs and egg in a large bowl being careful not to over mix (I use a fork and lightly toss until all the ingredients are mixed together). Form meatballs using about 1-½ tablespoons. You don’t want to make them huge.

Heat enough olive oil in the bottom of a large skillet to cover. Cook meatballs over medium heat until golden, about 5 minutes. Do not over cook; they will finish cooking in the sauces. Remove with a slotted spoon and set aside.

 

White Wine Sauce

Ingredients

2 garlic cloves, minced

4 tablespoons fresh flat leaf parsley, chopped

3 tablespoons sliced almonds

1 small onion, minced

½ teaspoon paprika

Generous pinch saffron threads

1 cup white wine

1-½ cups chicken broth

Olive oil

Salt and pepper

 

In the bowl of a food processor combine the garlic, parsley and almonds. Process until finely chopped and it becomes a “paste.”

Heat a couple of tablespoons of oil in a large skillet over medium heat. Add onion and cook until softened and translucent. Add the wine and broth. Simmer for 5 minutes. Whisk in the herb “paste,” paprika and saffron. Add the meatballs and continue simmering until cooked through.

Tomato Sauce

Ingredients

1 28oz can of chopped tomatoes

1 small onion, minced

2 garlic cloves, minced

4 tablespoons flat leaf parsley, chopped

1-tablespoon honey

Salt and pepper

 

Heat a couple of tablespoons of oil in a large skillet over medium heat. Add onion and garlic. Cook until onion softens, is translucent and the garlic fragrant. Do not brown. Add tomatoes, whisk in honey and season with salt and pepper. Bring sauce to a simmer. Add meatballs and continue cooking until meatballs are cooked through.
