Ragu Bolognese - Perfect for Family Sunday
Monday, March 2, 2009 at 10:25AM I got another one of those “Hey Mom” calls from upstairs this morning. The call with the “would it be okay if” tone about it. The one that usually means, the “crew” is on the way at some point this afternoon (anywhere from 5-10). Which is now deemed “Family Sunday” and that’s just fine with me. I deem it as…the guinea pigs are about to arrive, what can I test on them or what can I use from the fridge on them. Either one works and today it’s Bolognese sauce.

I went through the recipe search on the site and realized that I didn’t have one…a recipe for Bolognese sauce…that’s pretty stupid on my part. Since Italian food is probably my very most favorite and the “go to” cuisine when my culinary brain hits the wall. I also looked in the freezer and low and behold…ground pork, veal and beef. Perfect guinea pig food. Of course I’ve made Bolognese sauce before, just never documented it. Kind of like meatballs, everyone has their way of making Bolognese sauce, which is so cool. I just love the idea of old family recipes being handed down through the generations from one family member to another.
Serves 6-8
1 lb each of ground veal, beef, pork
2 medium onions, chopped
7 cloves garlic, smashed
6 oz pancetta, thinly sliced and finely chopped
12 oz tomato paste
14-½ oz crushed tomato
1 ½ cups white wine
1 ½ cups milk
2 sprigs fresh rosemary
2 tablespoons fresh thyme
Salt and pepper
2-3 tablespoons olive oil
Preheat oven to 225°F. Heat olive oil in a Dutch oven. Add pancetta and sauté until browned over medium heat. Remove using a slotted spoon, set aside. Add onions and garlic, cover and cook until translucent. Increase heat to high return pancetta to pan. Add veal, beef, pork and brown stirring often. Add tomatoes, paste, wine, milk, rosemary and thyme. Stir to combine flavors, bring to a simmer. Cover and roast in oven for 1 ½ - 2 hours until thickened. The house will smell so good for family Sunday!

Great pics, great recipe, great post! I want this for dinner tonight. Would it be a sin to add mushrooms to the sauce?
