Deep Dish Apple Pie with Lashings of Pure Vanilla - a First Place Winner!

I am over the pie shaped moon!  My apple pie won first place in the Junior League of Savannah’s first ever Pie Contest yesterday at the Wine and Food Fest.    I have a very beautiful blue ribbon displayed in my kitchen now along with the red one I won...oh, yes...My Banana’s Foster Custard Pie took home the silver and won second in show...ousted by a Margarita type pie...that’s okay.  Not a bad showing for my first ever pie competition and it just supports the cause...It’s All Delicious!  I’m just giddy with delight and there’ll be no living with me for a few days!

Deep Dish Apple Pie with Lashings of Pure Vanilla

Makes one 9-10 inch pie 


8-10 Granny Smith apples, peeled, cored and sliced (not too thin)

1/2-cup light brown sugar

1/2 cup granulated sugar

1-tablespoon cinnamon 

2 teaspoons nutmeg 

3-tablespoons vanilla

1-tablespoon cornstarch

A double recipe for a basic pie or tart dough (see below)

For the filling

Mix the sugars, cornstarch and cinnamon in a bowl.  Stir in the vanilla.  Add the sugar mixture to your apples and toss, making sure all the apple slices are covered. 

Fill a prepared crust with apple mixture, press down the apples to fit in the shell.   Cover with second crust.  Make a few slits in the crust to allow for steam to escape and bake at 375°F for an hour.  The pie is done when the apples are tender when a tester is inserted.  Let cool completely and better overnight so all the juices meld together.  Ice cream and or whipped cream are essential.

For the crust

2 cups all purpose flour

2 eggs

½ cup butter – cut in cubes

Process all ingredients together in the bowl of a food processor for 30 seconds.  If the dough does not form a rough shape, add a little ice water by tablespoon.  Turn dough out onto a floured board, shape in a disk and roll out.
