Chicken And Noodle Stir Fry

Lots of lime, lots of chicken, lots and lots of noodles, lots of homemade chili paste.   All that adds up to lots of flavor in not a lot of time and not a lot of trouble.  So pull your wok out and in “T” minus 7 minutes this will be on the table.  With lots of requests to make it again!  That’s a lot to love.

Serves 4

Ingredients

8oz Lo Mein noodles or angle hair pasta (cooked and tossed with a little sesame oil)

3 tablespoons Thai fish sauce (nam pla)

4 tablespoons fresh lime juice

2 teaspoons sugar

3 tablespoons chili paste (if homemade, to taste if store bought)

1 small onion, chopped

1lb ground chicken or turkey

1 bunch green onions, white and green parts sliced

Canola oil for frying

Additional lime wedges for serving.

 

Combine nam pla, lime juice, sugar and chili paste in a small bowl, stir to dissolve sugar and set aside. 

Heat wok over high heat.  Add a few tablespoons of oil, swirl to coat the wok.  Stir fry onions until the edges begin to brown. Add chicken and stir fry over high heat until cooked through about 3-4 minutes, breaking up the meat into small pieces.  Lower the heat, add noodles and sauce mixture, stir to distribute flavors and heat through.  Add the green onions, toss well and serve immediately with lime wedges. 

It's All Delicious Notes:  Ground pork would be delicious cooked this way as well.
