Chocolate Chip Cookies - the Best Ever In The Entire World
Monday, February 2, 2009 at 10:57AM These cookies come from Nick Malgieri and his Cookies Unlimited cookie book. Nick is the director of baking at Peter Kump’s Cooking school in NYC. These cookies use an entire bag of chocolate pieces and have been officially declared the Best Chocolate Chip Cookie Ever In The Entire World by our in-house experts here. They have a nice texture and everyone just loved all the chocolate chips in them…I have found chocolate chip cookie nirvana!
Makes about 45 cookies
Ingredients
2-½ cups all-purpose flour
½ teaspoon salt
3/4 teaspoon baking soda
8 oz butter, 2 sticks, room temperature
1 cup, 8oz light brown sugar, packed
1/2 cup, 4oz-granulated sugar
2 large eggs
1-tablespoon vanilla extract
1-½-2 12oz bags of semi sweet chocolate chips
Preheat oven to 375°F. Combine flour, salt and baking soda in a bowl, set aside. Cream butter and sugars together in a stand mixer fitted with the paddle attachment until combined. Add egg and vanilla and beat until smooth. Remove bowl from stand and mix in flour using a spatula, the dough will be stiff. Stir in chips and distribute through batter.
Drop heaping tablespoonfuls of dough on parchment lined baking sheets 2inches apart. Bake 12-15 minutes until cookies a golden around the edges. Transfer cookies to wire rack while still hot. Let cool completely and watch them disappear.
