A few days ago I had this brilliant idea that I was going to “smoke” something after watching a spirited episode of Emeril. He smoked mushrooms and then made a delicious risotto. I looked into buying a large smoker a few months ago then came to my senses knowing I would use it once, maybe twice. It would turn into one of those… “It seemed like a good idea at the time.” But this was different; Emeril used his very own stovetop smoker.
So, off I went to Foodnetwork.com and ordered my cast iron Emeril smoker. I resorted to this after a hugely unsuccessful attempt of hunting for a stovetop smoker on Hilton Head – and then devising a cunning plan to “make” my own smoker using a pan, wood chips and well…a complete failure. But I did end up with the most beautiful French oven from All Clad which was on major sale at William Sonoma. My Emeril smoker would be here in a few days. I put my enthusiasm on hold.
Three days later my stovetop smoker arrived, I was beside myself with glee and planned to smoke everything, chicken, mushrooms, and salmon. I opened my smoker and it was cracked and chipped. By this time my enthusiasm had turned to frustration and my grand master plans to smoke anything I could get my hands on…well…smoked.
If anyone from the packing department at the Food network is reading this…my advice to you would be to encase the inner product package with some sort of packing material – since the side that was cracked and chipped looked like it had been dropped and there was NOTHING on that end of the box to protect it. It must have been a hell of a drop too, as the entire side was smashed and a good chunk of cast iron had come off. I wonder what Emeril would have thought of all that? Not the kind of BAM Emeril would have wanted!
Oh, I'm going to post a Brussels sprout recipe that I am sure could turn the biggest sprout hater into a lover…I actually had a convert the other night.
And to think I toyed with using this as a smoker? What was I thinking?
