Fettuccine Carbonara with Pancetta and Broccoli Rabe - Dish of the Year - January Cooking The Covers

We had a pasta tasting night and we started with the Fettuccine Carbonara on the cover of next month’s Bon Appetit. They called it “Dish of the Year.” And let me tell you something. I see why they said it…
For one thing it was easy, so that’s a check in the right column. It was tasty, another check but click over to Cooking the Covers to see what the in-house experts had to say.
I also made a caramelized butternut squash pasta with green onions and penne. Very good too and I’ll post the recipe later today or tomorrow. Then to round it up a spicy Italian sausage and rosemary ragu…ditto on the recipe there...later or tomorrow.
