Cornbread stuffing issues

Thanksgiving preparations have started. I cleaned out and organized the pantry and fridge. The coffers need to be clear for the Thanksgiving entourage of ingredients that I start to stockpile. This worked out perfectly. There was a container of buttermilk that needed to be used and cornbread for stuffing that needed to be made. It just happened to be Tuesday and Mom’s Test Kitchen was heating up. Perfect! Nothing fancy just a good moist bread for stuffing. I’m happy to report she had a success. Which is a PHEW for me. Last year I scrambled and used the recipe on the back of a package. I was so disappointed with it (dry and bland) that I went out and bought a bunch of "fresh" cornbread from the Fresh Market (which cost a small fortune in cornbread terms).
This recipe came from last years November issue of Bon Appetit. Don’t knot how I missed it…doesn’t matter, Mom found it and now the cornbread issue is over. Click over to her page and see the results. It’s really good – for stuffing!
