Grilled Salmon with Maple, Horseradish and Chipotle Glaze
Wednesday, October 15, 2008 at 12:27PM Right next to the little container of Roasted Garlic on the top shelf of my fridge is another little container of what I call my “Glorious Glaze” this stuff is like magic! It tastes good on anything and it makes anything taste good. Chicken, lamb, pork (oh yes!) and last night it was salmon (so, oh yes!). It's a great dipping sauce for southwestern style spring rolls.

And dined on that...
So, here’s the recipe for all of the above…
Maple, Horseradish and Chipotle Glaze
Keeps in fridge for 5 days
1/2 cup maple syrup – get a good one not just your run of the mill pancake syrup
2 tablespoons Dijon mustard
1 tablespoons hipotle chile powder
2 tablespoons prepared horseradish
Whisk it all together. Brush on your meat, fish or poultry of choice and watch it disappear.
Another little variation for you…replace the chipotle with curry powder or even red curry powder for a good zing! I tell you this stuff is kitchen magic!
