Buttermilk Waffles - I Heart Waffles

 

 This morning I made a batch of buttermilk waffles.   When the hungry mouths wake up they can have waffles with bananas, waffles with peaches, waffles with nutella, waffles with powdered sugar or they can have waffles with homemade ricotta  and fig jam (that’s what I had…fig jam inspiration thanks to Julie at A Mingling of Tastes and her Sept 8th post).   Then for dessert they can have waffles with ice cream and caramel sauce or chocolate syrup.   When I think waffles, I think of Donkey in Shrek…Waffles make me happy!

"And tonight I’m makin waffles!”  

Buttermilk Waffles

  Makes 20 mini happy heart shaped lovable waffles

1-¾ cups flour

2-½ tablespoons sugar

1-teaspoon baking powder

½ teaspoon baking soda

2 eggs

2 cups buttermilk

½ cup canola oil

1 ½ teaspoons vanilla

Mix dry ingredients together in a medium bowl.   Make a well in center.   In a separate bowl mix the eggs (beat slightly), buttermilk oil and vanilla.   Add the wet ingredients to the dry, stirring until just moist (the batter will be slightly lumpy…that’s okay)

Pour just enough batter into waffle grid (my mini heart waffle maker takes a scant ¼ cup of batter for neat shaped waffles).   Spread to edges with a spatula.   Bake according to manufacturers instructions – mine blinks and beeps when the little darlings are ready.   Resist the attempt to open the waffle iron too soon, if you do they'll split open and be a pain to get out!   Serve warm with love or fig jam and ricotta (did I say that already?)
