Friday Routines 10/10 - Kitchen Competition for my readers

What a miserable rainy, dreary, dank day. Just yucky and a good day to mess up the kitchen! There's chicken stock on the go which is turning into a three day process. I keep adding chicken bones to the pot and sticking it the oven to roast. The latest carcess to go in was from Ms. Poulet Rouge Fermier du Piedmont. I roasted that bird the other day. I did love the flavor and texture. The meat was dense and golden in color. I thought it tasted similar to a guinea fowl rather than a true domestic bird. It tasted more poulet-y. And being French, expensive at $15.00 for a 3lb-er. I can’t justify that as a regular in my shopping cart when trying to feed all the hungry mouths that turn up in my kitchen. With the endless stock pot simmering I'll make chicken noodle soup this afternoon and perhaps a chicken pot pie so we’ll have all that for the weekend.
I picked up a side of salmon from Scotts (Bluffton Butcher exrodinaire). His is the best I have found around the Island. It’s not wild but as close as since it's farmed raised in the Atlantic rather than a former catfish pond. I'm trying to ramp up my omega-3 and cut my calorie intake a bit.
So salmon once a week and cutting out the massive amount of pasta I usually used to consume is part of the new regime. I’ll throw the Salmon on the grill either tonight or tomorrow and anyone who is around can join in the omega-3 party.
On a less healthy note: Mom and I were talking about our kitchen competition this week, looks like braised short ribs will hit the pots, hers versus mine.
