Salt and Pepper Crusted Rib Roast - Gourmet, 2008

This was delicious and so easy.   I worried that the peppercorn crust would be too much for everyone (especially me, I have an aversion to anything peppercorned due to over use of all colored peppercorns in sauces   in the early 90’s)   The roasting mellowed the peppercorns and added a nice little zing to the gravy I made with the pan and resting juices (and a little more beef stock).   It was delicious and so simple.   Forgot how good a rib roast was.   Bit pricey though, but well worth it.  Oh...it looked just like the cover too!

I don’t eat much beef anymore and this was a treat.   The meat was tender.   It was good.   I liked the peppery crust.   I really enjoyed it especially since I had not had a rib roast in a long time.   A nice treat.

I loved it.   It was   great to have beef for Sunday lunch for a change.   I was worried that I was growing feathers, since Mum has been on a health kick.   I like this cooking covers thing she is doing.

Moms Note:  He piled four slabs of beef on his plate and ate it all!

Roast beef for Sunday lunch with mashed potatoes and gravy is my favorite.   The meat was so tender you didn’t even need a knife to cut it.   The roasted carrots were good too.   More   beef please Mum!

Moms note:   Soph made a hot roast beef sandwich for lunch the next day.
